Semi hard cheese exclusively made by the Caseificio San Vito from whole milk. Flavor is sweet and strong thanks to its aging of 60 days.


Whole milk, rennet, milk enzymes, salt


Thin and elastic crust, white or pale yellow paste, even when cut, with irregular holes. The wheels are cylindrical (diameter 30-40 cm, height 11-15cm) with average weight between 14 and 15 kg.


60 days minimum During this period the wheels are turned upside down many times to guarantee a perfect aging.
